Our direct trade relationship with the fine folks at Finca Los Angeles in El Salvador led us to a tiny adjacent 3-acre farm in the volcano's crater called Finca Laguna de Alegria. Run by a charismatic man named Eto, Eto allows the coffee cherries to ripen before being harvested, a time-consuming process that imparts a syrupy earthy sweetness to the beans.
