The key to a perfect Viennese roast is to find the perfect roast temperature and roast time to when the oils in the beans are just beginning to be released. If you get it just right (which we always do), youll see the oily sheen on the surface of the beans, and the color of the beans will maintain a deep brown color as opposed to a darker brown-black you get from French and Italian roasts. The result yields a richness and boldness of a dark roast while maintaining the more subtle nuances and delicate characteristics of the beans.
